NARA Bio Mazafati Dates

Originating in the arid regions of Iran, where extreme daytime temperatures are followed by sudden overnight chills, Mazafati dates are a product of contrast: sun-ripened, refined by the cold. These special weather conditions cause the fruit to develop an incredibly soft and homogeneous pulp. The skin is thin and shiny, dark brown with black reflections, and the core becomes fondant, approaching the consistency of a ganache cream.

They are harvested in the warm season, at full maturity, and carefully stored under controlled conditions to preserve this much-sought-after texture.

Our partner farm is located in the spectacular Bam region, located at an altitude of approximately 1,000 meters. The region is known for its unique history and culture, home to the famous Bam mud buildings, a UNESCO World Heritage Site. The city of Bam was once an important junction on the Silk Road and has a rich cultural history.

The climate of Bam is characterized by high temperatures and dryness. In summer, temperatures can exceed 40°C and in winter they can drop below freezing. Despite these extremes, the region has proven ideal for growing dates.

We are proud to have been working with this farm for eight years. Regular visits have led to a friendly relationship with the farmer and his family. The farm is run as a family business, which gives it a special personal touch. Working closely with them allows us to develop a sustainable partnership and support ethical and organic farming.

Mazafati are almost too delicate to cook — but perfect for enjoying with your eyes closed. They can be enjoyed as is, at room temperature, or slightly chilled, for a natural mousse effect.

They pair wonderfully with rich dark chocolate, fine cream cheese or a fragrant white dessert wine. You can create a simple and spectacular dessert by filling them with mascarpone and topping them with a few flakes of sea salt or exotic enveloping spices, such as cardamom powder - you can transform Mazafati dates from a snack into a taste revelation.
